How the Midwest Shaped My Vegetarian Diet

Shelly Westerhausen is the writer behind Vegetarian 'Ventures, a food site dedicated to vegetarian recipes inspired by her Midwestern upbringing. The following essay is adapted from Westerhausen's upcoming cookbook,Vegetarian Heartland. Published in Bon Appetit 

"Everything changed when I moved to Bloomington, Indiana in 2008. I became immersed in a richer food scene than I had ever lived in before. I tasted Indian, Thai, and Turkish food for the first time and got lost in Bloomington’s many eclectic and natural grocery stores. I’ve spent the last 10 years living down the road from the largest farmers’ market in the state and have watched as the restaurant scene in this unassuming college town continues to flourish."
